Delicious Toasted Quinoa Salad

Quinoa is an ancient fruit that is treated like a grain which has been grown for over 5000 years in the South American Andes. Quinoa can be cooked just like rice, it is packed with protein, flavour and nutrients. For breakfast, quinoa can be cooked up like oats and topped with fruit or honey. My favorite is a Toasted Quinoa Salad, here is the recipe:

Rinse and drain 3/4 cup uncooked Quinoa (very important as this takes away bitterness). Place rinsed Quinoa into a pot over medium heat, toast until the grains begin to "pop." When grains are popping add 1 1/2 cups water, bring to a boil, reduce heat, cover and let simmer for about 15 minutes or until all water is absorbed. Remove from heat and let stand for 10 minutes before fluffing with a fork, meanwhile prepare the following:

1 cup diced carrots
1/2 cup chopped red bell pepper
1/4 cup minced parsley or cilantro
2 sliced green onions

Place above ingredients and the cold Quinoa into a large bowl and set aside. In a small bowl whisk together:

the juice of 1 lemon and 1 lime (or 1 - 2 tablespoons of each)
1-1/2 tablespoons Tamari soy sauce (be sure to get the Gluten Free kind)
2 cloves minced or pressed garlic
1 teaspoon chili sauce (tobasco) (or use a pinch of cayenne, a few red pepper flakes, etc.)

Pour dressing over salad and mix well. Refrigerate until it is time to serve. I always find the flavor the best the following day so it is a great dish to prepare in advance.
