Greek furtalia


  • 6 large potatoes, peeled and cut into small cubes
  • 6 sausages, cut into small pieces
  • 6-7 eggs
  • 1 tsp of water
  • feta cheese, minced
  • parmesan cheese
  • pinch of spearmint
  • salt and pepper to taste


  1. deep fry the potatoes
  2. pan fry the sausages 2 minutes in a large pan
  3. when cheese begins to melt in add the fried potatoes
  4. in a bowl add in eggs, water, parmesan, spearmint and salt and pepper
  5. mix well with a fork and pour mixture on top of the potatoes and sausages in the pan
  6. fry on medium heat for 5 minutes
  7. flip the omelette and cook on the other side for 5 minutes or until cooked
