Armadillo eggs


  • 2 cups unpitted olives (black or green)
  • 1/2 cup beer
  • 1/2 cup olive brine
  • 1/2 cup olive oil (extra-virgin)
  • 1/4 cup white vinegar
  • 2 cloves of garlic (minced)
  • 1 tsp of dried cayenne pepper
  • 1/2 tsp cumin seeds
  • 3/4 tsp chili powder


  1. Add in all other ingredients together in a bowl, mix thouroughly
  2. Add in olives, and mix everything together
  3. Let everything marinate for a day or two
  4. Serve after tasting to make sure everything is well marinated


These olives are always a huge hit at parties, and taste better with age for a day or two.
