California rolls

Ingredients

  • 1 cup ricotta cheese
  • 1 cup red onion (thinly sliced)
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • 2 cups torn spinach leaves
  • 1 cup alfalfa sprouts
  • 1 tomato, thinly sliced
  • 2 tortillas (flour or corn)

Instructions

  1. Evenly spread cheese over the tortillas to within 1/4 inch of the edge
  2. Layer onion, oregano, spinach, alfalfa sprouts, tomato and basil over 2/3 of each tortilla
  3. Roll up the tortilla, and cover in plastic wrap
  4. Refrigerate for at least 1 hour, ideally overnight

Comments

Serves 4. When serving, remove plastic wrap and cut the log into 8 - 10 slices.
