Gluten free almond croissants

Ingredients

  • 1/3 cup honey
  • 2 tbsp water
  • 2 tsp vanilla
  • 2 cups gluten-free flour
  • 1 cup solid coconut oil
  • 1/2 cup ground almonds
  • 2 tbsp almonds slivers

Instructions

  1. Mix the honey and coconut oil together
  2. Blend in vanilla and water
  3. Slowly mix in flour and ground almonds
  4. Put the dough into the fridge and chill for 1 hour
  5. Create logs from the dough, each 1 inch wide and 6 inches long
  6. Cut these logs in half and shape them into crescents
  7. Place on non-stick or oiled baking sheet
  8. Brush each croissant with oil and sprinkle with almonds slivers
  9. Put them into the oven at 325 to 350 degrees for 12 - 14 minutes or until lightly browned around the edges
  10. Once fully baked, let them sit out until cool
