Gluten Free Sesame Bread

When you go gluten free it can be hard to find bread that tastes and feels like the "real thing." After many failed attempts, I have finally found a recipe that works. Although it seems like many ingredients, once you get them all together, let the breadmachine work its magic. The loaf is light and spongy, perfect for sandwiches or on its own, warmed with a little butter. Enjoy!

In a bowl combine the following DRY ingredients:
1 Cup Corn Starch
1 Cup Bean Flour of your choice (I use Garfava Bean)
1 Cup Tapioca Starch
3 Tablespoons Sugar
2 Tablespoons Sesame Seeds
2 1/2 teaspoons Xanthan Gum
1 teaspoon Unflavored Gelatin
1 teaspoon Salt
1 Packet of Instant Bread Machine Yeast (2 1/4 teaspoons if you use the jar)

Place the following WET ingredients in the bowl of your Bread Machine:
2 Egg Whites (Slightly Beaten and Room Temperature)
1 Whole Egg (Slightly Beaten and Room Temperature)
1 1/2 Cups Water (Also Room Temperature)
4 Tablespoons Butter or Margarine cut into small pieces
1 Tablespoon Molasses
1 teaspoon Cider Vinegar

Set your breadmachine to a gluten free setting for a 2lb loaf with a medium crust.* Once liquids are in the bowl and the machine begins to knead add your mix of dry ingredients scraping the side with a rubber spatula to make sure all ingredients get properly incorporated. Close the lid and let the machine work its magic.
