Pineapple flambe

Ingredients

  • 8 pineapple slices
  • 3/4 cup pineapple juice
  • 4 tbsp sugar
  • 4 tbsp butter
  • 1 tsp ground coffee
  • 1/2 cup rum
  • 1/2 cup almonds (roasted & grated)

Instructions

  1. Heat the butter in pan
  2. Saute pineapple slightly on both sides
  3. Add in juice, sugar & coffee and simmer for about a minute
  4. Add rum and flambe(light it on fire for a few seconds)
  5. Plate on large dish and garnish with almonds
