Texas shrimp and rice

Ingredients

  • 1 1/2 pounds large shrimp
  • 1 tsp cumin seeds
  • 1 tsp dried oregano
  • 1 tsp white pepper
  • 1 tsp salt
  • 3 tbsp vegetable oil
  • 2 medium onions, chopped
  • 2 garlic cloves, minced
  • 1 large green bell pepper, chopped
  • 1/4 cup roasted green chile
  • 1 bay leaf
  • 1 1/2 cups rice, uncooked
  • 3 cups shrimp or seafood stock
  • 2 tbsp lemon juice
  • 1/2 cup cilantro, chopped
  • 6 green onions, sliced

Instructions

  1. peel the shrimp, then refrigerate until you are ready to use them
  2. warm the oil in pan over medium heat
  3. add the onions, garlic, green pepper, and green chile, and saute them, stirring occasionally for about 5 minutes, until the onions have softened
  4. add in dried seasonings and rice, stirring to coat all the grains, and cook for approximately 2 minutes
  5. add seafood stock and lemon juice, bring to a boil
  6. cover, reduce heat to medium-low and simmer for 18-20 minutes
  7. check occasionally and stir if the rice appears to be sticking
  8. stir in shrimp and green onions for 2 to 3 minutes
  9. remove from heat, and let sit, covered for 10 minutes
  10. sprinkle the cilantro over the dish and serve
